Vegetable Lo Mein

The great thing about this lo mean is that you can use just about any vegetable you have on hand! Even better, you're not spending $8 dollars to feed your self or you family! This recipe serves 2 so double it to feed more!


Vegetable Lo Mein

4 ounces uncooked lo mein noodles

1 tablespoon canola or sesame seed oil

1-1/2c of frozen stir fry veggies

1 clove of garlic minced

3 tablespoons low sodium soy sauce

1/4 tsp of canola or sesame oil

1/2 tsp brown sugar

1/2 tsp mirin (optional)

Pinch of sesame seeds to garnish


Cook noodles according to package instructions. In a small bowl whisk together 2 tablespoons of soy sauce, oil, sugar and mirin. Set aside.


Keep one tablespoon of soy sauce on reserve (just in case) Heat oil in a large skillet. Add frozen veggies and garlic and sauté for about 5 minutes. Add cooked noodles and sauce toss to combine. Enjoy!
