Super Easy Asparagus
A quick easy recipe that you can use as a side for any occasion!
Asparagus
1 bunch medium asparagus (1 pound)
2 tablespoons extra virgin olive oil
2 tablespoons freshly grated Parmesan cheese
1 teaspoon lemon zest
Kosher salt and freshly ground black pepper to taste
Fill a medium pot halfway with lightly salted water. Bring to a boil. While the water is heating, remove the tough outer layers of the asparagus and slice them into 1- to 2-inch sections.
Add to boiling water then reduce the heat to a simmer for 2 minutes.
In a small bowl, combine the olive oil, parmesan, and fresh lemon zest.
Drain asparagus add to bowl, toss to combine. Enjoy either warm or room temperature!
