Strawberry Salsa
I wanted to take some time to highlight some seasonal produce. And not only give you some nutritional tidbits but a quick recipe to go along with it!! Strawberry picking season varies in the US but here in the northeast we can pick anywhere from April to June! Mid May be the optimal picking time! Strawberries are a nutrition powerhouse! They increase your good cholesterol (HDL), they are packed with fiber, antioxidants and potassium! You can do so many wonderful things with strawberries! Whether it’s in a baking recipe to a salad!! Strawberries are Top Notch!! 🍓
Servings (1/4c) 60 Calories, Carbohydrates 8g, Fiber 2g
Strawberry Salsa
1c of strawberries
1 small tomato, diced
1/4c red onion, diced
1/2c cilantro, chopped
1/2 fresh lime juice
1tbs EVOO
1/2 jalapeño, diced
Pinch of kosher salt Dash of ground pepper
Dice strawberries add to a bowl with diced tomatoes, onion, cilantro, lime juice, jalapeños and EVOO. Sprinkle with salt and pepper. Toss to combine. Enjoy!!!
