Mixed Berry Compote

I love a good compote! It’s so versatile and let’s be honest… yummy! Here’s my first seasonal compote! I hope you like it! 😋❤️

Mixed Berry Compote

1 bag (12 ounces) frozen mixed berries

1-2 tablespoons honey (start w/ 1 tbs) if you want added sweetness you can add the other tbs.

1/2 fresh squeezed lemon

In a medium saucepan, combine your frozen fruit of choice, honey and lemon. Bring the mixture to a boil over medium-high heat, stirring occasionally. This will take about 10-15 minutes for frozen fruit.

Once boiling, reduce the heat to medium. If you’re using chunky fruit or prefer a smoother consistency, mash the fruit with a potato masher or fork until it reaches your desired consistency. Continue simmering, until some of the compote is reduced. Say about 8-10min.

Let the compote cool for a few minutes before serving. It will thicken up a bit as it sits. Add a dollop to yogurt, ice cream, use as a topping on waffles or pancakes!!!
