For this week’s produce spotlight we’re going to talk about the Mango!!! Mangos can be harvested year round in different areas. But, here in the northeast, anytime from April to June (spring-ish time) is considered peak time.
Mangos are fat free, sodium free and cholesterol free. They are high in Vitamin C and Vitamin A which is great for our immune systems! They also have a generous amount of fiber! Which is important for digestive health! 🥭
Calories per serving (1/4c) 68 calories
2 ripe mangoes, peeled and diced
1 small red onion, diced
1/2 jalapeño, seeded and diced
1/4 cup chopped fresh cilantro, chopped
Juice of 1/2 lime
1/4-1/2 tsp of honey
Combine all ingredients together. Serve!
