Chickpea Salad Sandwich
This is s great alternative to chicken or egg salad! Vegetarian and Vegan friendly (If you use vegan mayo 😉) Great as a sandwich or on a bed of lettuce!!
Chickpea Salad Sandwich
15 ounce can chickpeas-low sodium
1/4 medium red onion
1 to 2 tablespoons mayonnaise (if vegan then use vegan mayonnaise)
Half Carrot (Shredded)
2tbs Cilantro
1/2 clove garlic
1 tablespoon lemon juice
1/4 tsp Kosher salt & ground pepper
1 -100% whole wheat or multigrain roll
Small handful of lettuce or spring mix
1 slice of red onion (garnish)
In a food processor, combine the chickpeas, mayonnaise, red onion, Dijon mustard, garlic, cilantro, lemon juice, carrot and pinches of salt and pepper. Pulse until combined, but do not puree.
Assemble sandwich by layering bread with lettuce or spring mix top with chickpea salad! Enjoy!
