Black Bean Soup
This is a great soup on a rainy day any time of the year!! Rich in protein and fiber it not only is a bowl of comfort but it's "guiltless" please! The measurements here are for 2 servings! Double it for 4 or more!!

Black Bean Soup
1/2 tablespoon extra-virgin olive oil
1/2 medium white onion, chopped
1/2 teaspoon kosher salt
1 garlic clove-minced
1/2 teaspoon cumin
1/4 teaspoon chili powder
1 (15-ounce) can black beans including the liquid in the can
3/4 cups vegetable broth
1/2 tablespoon lime juice
1/4 avocado (garnish)
Heat the oil in a large pot over medium heat. Add the onion and salt and sauté until the onion is translucent, about 5 minutes. Add spices and stir for 30 seconds. Stir in the beans, broth and simmer for 30 minutes.
Let cool slightly and transfer half of the soup into a bowl and use either immersion blender or standard blender. Puree until smooth, then add it back to the pot with the remaining soup and stir. Stir in the lime juice.
