Oatmeal Streusel Muffins
Looking for a dense, low fat muffin, to make ahead for days where you’re on the go? These muffins are great with a cup of coffee and are super filling without the guilt! You can shave off about 50 calories if you omit the streusel topping. Otherwise each muffin (not cupcake size) is 245 Calories.

Muffin Ingredients:
1c Fat free milk
1c Quick oats
1 Large egg
1/4c Applesauce
1c Whole Wheat flour
1/4c Brown Sugar
2 tsp Baking Powder
1/2 tsp Salt
Streusel Ingredients:
¾c Quick oats
¼c Whole wheat flour
1 tsp cinnamon
2 tbsp Maple Syrup Grade A
1 ½ tbsp unsalted butter, melted
Preheat oven to 425 degrees. Grease muffin cups or line with paper muffin liners.
In a small bowl, combine milk and oats; let soak for 15 minutes.

In a separate bowl, beat together egg and applesauce, stir in oatmeal mixture. In a third bowl, sift together flour, brown sugar, baking powder and salt. Stir flour mixture into wet ingredients, just until combined.
For streusel topping, whisk together the oats, flour, and cinnamon in a small bowl. Make a well in the center. Pour in the maple syrup and melted butter.
Spoon batter into prepared muffin cups until cups are 2/3 full and top with streusel!
Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
