Cheddar Jack Muffins
This social distancing and staying put has mama over here baking! Which is fine because I LOVE to cook and bake!
I’m really trying to take this time home, to be more creative in the kitchen. Don’t get me wrong, my career enables me to work from home! So, my plate is full (pardon the pun) 🤪
The thing with being in the kitchen, is that it relaxes me. I truly enjoy it. I do what I want, how I want, at my pace and it comes out yummy! Needless to say, I’ve had enough time to make some yummy things!
Like this recipe for Cheddar Muffins! I found the recipe and added pepper jack cheese for a little kick!
Cheddar Jack Muffins

Ingredients
2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
1-1/2 cups shredded Cheddar cheese
1 cup of pepper jack cheese
1 large egg
1 cup milk
6 tablespoons butter melted
Instructions
Preheat oven to 400 degrees. Lightly spray muffin tin with baking spray and set aside.
Whisk together the flour, sugar, baking powder, and salt in a large bowl. Add the shredded cheeses and gently toss together with the flour mixture.
Stir together the egg, milk, and melted butter in another small bowl. Pour the egg mixture into the flour mixture and stir until just combined.
Spoon the cheese muffin mixture into the prepared muffin pan. Bake until golden brown, 20 to 25 minutes. Enjoy!! 😋
