Air Fried Eggplant Sticks
Here’s another tasty snack for your pre thanksgiving dinner spread! These are great as a game time snack as well. They can be made vegan friendly by swapping the egg for olive oil or a light coating of vegan mayo to bind the bread crumbs!
What I like about using the air fryer is that it’s the best of both worlds! You’re not deep frying anything in oil which adds fats and cholesterol but instead you’re air frying which gives you the taste and texture of a deep fry without the added calories and cholesterol!
Air Fried Eggplant Sticks

Ingredients:
1 egg or vegan mayo if vegan
1 tbs of water
1/2c Italian-seasoned bread crumbs
1 small to medium sized eggplant
Preheat air fryer to 370 degrees. Line basket with parchment paper. Beat egg and water in a dish or place vegan mayo in a bowl with water and mix. Add bread crumbs to another dish.
Cut ends off eggplant. Peel and cut into sticks about 3 inches long and 1/2 inch wide. Kind of like French fries.
Coat eggplant sticks in egg or mayo mixture then coat with bread crumbs. Spray coated sticks with olive oil cooking spray.
Cook for 12-14min shaking basket halfway through to ensure even cooking. Eggplant should be tender and lightly browned!
Serve with some ranch dressing for dipping!
