Spinach & Egg Muffins

I’m all about simplicity in the mornings! I don’t have time to whip up a huge nutritious breakfast during the week for the family. Sunday’s are usually our meal prep day and with our lunches and dinners, I’m now starting to incorporate easy make ahead meals for breakfast! One of which are Egg Muffins!

Egg muffins are a delicious and quick way to get a protein packed breakfast on the go! Each muffin is has 6g of protein. Great for meal prep as they are good for up to 5 days in the refrigerator and can be froze for up to 2 months. Reheat them for 15-30sec depending on your microwave wattage!

Spinach & Egg Muffins

Ingredients:

4-6 large eggs

1/4c Low fat cheese

1/4c chopped Spinach

Cooking spray (Pam)

Preheat oven to 325 degrees

Spray 4-6 muffin tin cups

Beat eggs and season with salt and pepper.

Fill egg batter into tins-2/3-3/4 of the way.

Sprinkle a 1/2tsp of spinach and cheese onto each muffin. Bake for 15min. Let cool and enjoy!

**You can top your muffins with just about anything! Turkey bacon, peppers, onions, turkey sausage etc....
