4th of July Lentil Burgers!!!
Hey y’all!! Do you have any family or friends who are vegan or pescatarian? Are they coming over to celebrate the holiday with you and your family? If you do, I have a great recipe for lentil burgers that I want to share!! These burgers can be cooked on the grill or as I’m going to share in this recipe-in the air fryer!!!!
I’m choosing to make them in the air fryer because these literally take 8-10min to make and since this recipe is not only for family BBQ’s, I thought, why not give my readers another option on how to cook them!
1 14oz can of vegetable broth
1c of dried lentils, Rinsed
1 small carrot shredded
¼ c of chopped mushrooms
¼ c plain panko break crumbs
½ onion chopped
3 garlic cloves, minced
1tsp of Italian seasoning
Bring broth to a boil in a medium saucepan. Add lentils. Reduce heat to low. Cook covered for about 30 minutes. Allow lentils to cool.
In a blender or food processor, pulse to chopped. Do not over process, you want the mixture to have a chunky like texture. Add mixture to a separate bowl and add egg, panko bread crumbs, onion, garlic and Italian seasoning. Refrigerate for 2hrs to firm up.
Shape mixture into patties (Should get about 4 patties)
Warm Air fryer to 390 degrees. Spray with nonstick spray. Cook for 8-10 minutes or until nice and brown. Serve on rolls, a bed of lettuce or like I did here, toasted wheat bread slices!
