Mediterranean Chicken and Orzo
My love for the Mediterranean eat of life has consumed me! Lol 😆
I care across this recipe on Eating Well and I had to make it! I made a few small changes in the ingredients to my liking but it came out delicious. The lemon gives it such a light refreshing taste. It basically tastes like spring!
Mediterranean Chicken and Orzo

Ingredients
1 pound boneless, skinless chicken breasts trimmed
1 cup low-sodium vegetable broth
2 medium tomatoes, chopped
1 medium onion, halved and sliced
Zest and juice of 1 lemon
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon ground pepper
¾ cup whole-wheat orzo
2 tablespoons chopped fresh parsley
Cut each chicken breast half into 4 pieces. Combine the chicken, broth, tomatoes, onion, lemon zest, lemon juice, Italian seasoning, salt and pepper in a 6-quart slow cooker. Cook on High for 2 hours or on Low for 4 hours. Stir in orzo; cook for 30 minutes more. Sprinkle with parsley
