Mini Chickpea Patties
Since I started eating more of a Mediterranean inspired diet, I’ve been feeling so great. It’s literally one of the best ways to eat! Vegetables, fish and very little meat is basically the way my family has been eating for quite some time now. The transition was seamless.
One of my favorite things to eat are chickpeas! Chickpeas are so versatile! You can stew, roast and mash them for any recipe! These legumes are high in protein which is why most vegans use them for various recipes that call for protein.
Here is a recipe for mini chickpea patties that I made using the air fryer! Add them to a salad for protein or nibble on them alone with with hummus or dip them in tahini sauce! 😋

Mini Chickpea Patties
Ingredients:
1 Can (15oz) Chickpeas, rinsed and drained
1c grated carrots
1/3c seasoned whole wheat bread crumbs
1/4c creamy light Italian dressing
1 egg white
Preheat air fryer to 370 degrees. Spray basket with nonstick cooking spray.
Mash chickpeas in a medium bowl. Add carrots, bread crumbs, salad dressing and egg white and mix well.
Shape mixture into mini patties. Should yield about 18-20 patties.
Cook for 10 minutes flipping them over midway through and browned.
I like to dip mine in hummus, or add them to a salad! Enjoy!
