Spinach Balls
I love using the air fryer! Not only does it cut calories and fat in most recipes but it’s so quick and convenient.
I was hosting one of my healthy brunches and I was looking for some ideas for finger foods. I came across this great recipe for Spinach balls and figured I’d give it a go.
They were a hit! Filling, tasty and 25 calories per ball. They had a nice crunch on the outside and soft on the inside! Definitely something worth having as an appetizer at your next event!
Spinach Balls
Ingredients:

1 pkg herb-seasoned stuffing mix
1 small onion
2 tbs grated parmesan cheese
1 garlic clove (minced)
¼ tsp of Italian seasoning
¼ tsp pepper
1 pkg of frozen chopped spinach (thawed and drained)
1/4c of chicken broth
2 egg whites, beaten
Instructions:
Preheat air fryer to 370 degrees
Combine stuffing mix, onion, parmesan, garlic, pepper and Italian seasoning in a medium bowl. Sprinkle evenly over pita wedges. Combine spinach, broth and egg whites in separate medium bowl. Stir into stuffing mixture. Cover and refrigerate for 30-60 minutes to firm up mixture.
Form mixture into 24 -30 mini balls. Cook for 5-6 minutes or until balls are browned.
