Mediterranean Chicken Salad

Believe it or not, I am a big fan of Mediterranean food! I hope my husband who is reading this, surprises me with a trip to Morocco, Greece or Turkey for one of my birthdays. I hear that the authentic food there is amazing and so unlike what we eat here in the states!

Growing up, my mom would always experiment and try different recipes. We weren’t your typical Latino food eating household. We ate all types of foods!

One of my favorite Mediterranean dishes she made was a chickpea salad but that’s for another blog. Today, I want to share this yummy Mediterranean Chicken Salad that we love. It’s Mediterranean diet friendly and a great meal prep recipe. :)

Mediterranean Chicken Salad

Dressing:

2 Tbsps. olive oil

juice of 1 fresh lemon

2 Tbsps. red wine vinegar

2 Tbsps. fresh chopped parsley

2 tsps. dried basil

2 tsps. fresh garlic, minced

1 tsp dried oregano

1 tsp sea salt

pepper, to taste

1 lb. chicken breasts

Salad:

6 cups Romaine leaves, chopped

1 large cucumber, diced

2 tomatoes, diced

1 red onion, sliced thin

1 avocado, sliced

⅓ cup Kalamata olives

Instructions:

1. Mix or shake all the dressing ingredients in a glass cruet or dressing bottle. Pour half of the mixture into a large, shallow dish or bowl. Refrigerate the remaining mixture for the salad, later.

2. Add the chicken to the mixture in the dish; marinade chicken for 30-45 minutes. While the chicken marinates, prepare your vegetables in a large salad bowl.

3. Heat 1 tablespoon of oil in a grill pan or a grill over medium-high heat and cook chicken till its cooked through.

4. Once chicken is done slice and add to salad. Drizzle salad with the remaining dressing in the refrigerator and mix well. Enjoy!!!
