Sweet Potato Soup

Omg ladies and gents I have to share this recipe with you!!!

Yesterday, (January 27th) after spending the weekend with my in-laws, I came home to meal prep. I couldn’t bring myself to grill some chicken and steam some vegetables because quite honestly, I was tired and I wanted to make something quick!

I remembered a sweet potato soup I had a few weeks ago at our local hale and hearty and became inspired!

The result was this delicious soup that warmed every bone in my body and literally made me feel good!

Sweet Potato Soup

Ingredients:

  • 2 pounds sweet potato, cubed (about 2 large)

  • 2 teaspoons olive oil

  • 1 cup chopped onion

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon crushed red pepper

  • 4 cups unsalted chicken stock (such as Swanson) or vegetable stock I used chicken!

  • 1/4 teaspoon salt

  • 6 turkey bacon slices, cooked and chopped

  • 1/4c fresh Parmesan cheese

Directions:

Peel, cut and boil sweet potatoes till tender.

While potatoes are boiling, heat a saucepan over medium-high heat. Add oil; coat pan. Add onion; sauté 1 minute or until translucent. Stir in cumin and red pepper. Add chicken stock to pan; bring to a boil. Place half of sweet potato and half of stock mixture in a blender. Blend until smooth. Pour pureed soup into a large bowl. Repeat with remaining sweet potato and stock mixture. Stir in salt. Serve, sprinkle cooked bacon and Parmesan cheese evenly over top. Enjoy!!!
