Turkey Croquettes

Ahhh black Friday, the day after Thanksgiving. Did you host Thanksgiving in your home? If so, how much food did you send your guests home with? How much do you still have?

If you have a ton of turkey and stuffing left over, I have a great recipe that I came across for Turkey Croquettes! I made some small adaptations to the recipe, to shave off a few calories but otherwise this is a great way to do something different with your left overs! Add a small side salad and you have healthier day after Thanksgiving meal!

Turkey Croquettes

Ingredients:

2 cups leftover stuffing

2 cups leftover turkey breast

1 1/2 cups panko bread crumbs

1 egg lightly whisked

cooking spray

Instructions:

Preheat oven to 375 degrees. Place the stuffing and turkey in a food processor. Pulse until well chopped and combined. Roll 3 tablespoons of the turkey mixture into oblong or round ball shapes.

Roll each croquette in the egg and then in the bread crumbs. Place the croquettes on a baking sheet lined with parchment and lightly coat with cooking spray.

Bake for 15-20 minutes or until golden brown. Serve with gravy and or cranberry sauce,
