Balsamic Glazed Carrots with Maple Bacon

My second recipe for a healthier Thanksgiving side, is my Balsamic Glazed Carrots with Maple Bacon. Delicious and done in under 30 minutes. Sweet and savory, but low on the calorie scale. With only four ingredients, that most folks have on hand, this recipe is easy and looks fancy on the table!

Balsamic Glazed Carrots with Maple Bacon

Ingredients:

2 pounds of organic carrots

1/2 cup balsamic vinegar

1/4 cup real grade A maple syrup

1/4 cup bacon (or to make it healthier turkey bacon) cooked and crumbled

Instructions:

Preheat the oven to 425F.

Add the vinegar and maple syrup small pan and bring to a boil. Let simmer for 10 to 15 minutes until it is slightly thicker.

Steam the carrots until they are somewhat soft but not completely cooked. This can take a few minutes. For me 7minutes but it can easily be 5minutes depending on how thick you cut the carrots.

Put them in a baking dish. Sprinkle crumbled bacon over it. Pour over the glaze over and toss lightly. Bake for about 10 minutes.
