Feel Good Cleanse Salad

4th of July was pretty hot and amazing for us here on the east coast! With it falling dead smack in the middle of the week, it allowed for celebrations the weekend before, the day of and the weekend after. What that equates to is... A LOT OF EATING and DRINKING! We literally ate any and everything and didn't have a care in the world. That is until we stepped on the scale and felt the bloating from the fun-filled week of eating and drinking!

I'm more than sure, that I am not alone, which is why when this happens, I hit the good old "reset" button and get back on my grind. To start, I go with my classic "Feel Good Cleanse Salad" I call it feel good because, when you eat it, you literally feel so good for two reasons: 1. its loaded with nutrient dense veggies and 2. it tastes so damn good! It literally gives you the boost you need, to have your body feeling normal and healthy again!

Feel Good Cleanse Salad

2 cups lettuce

2 cups broccoli florets

2 cups brussels sprouts, roughly chopped

2 cups red cabbage, roughly chopped

1 cup carrots, roughly chopped

½ cup fresh parsley

½ cup almonds (Optional I myself am allergic but my hubby loves them)

1 to 2 Tbsp sunflower seeds

3 Tbsp olive oil

½ cup lemon juice (or juice of two lemons)

1 Tbsp fresh ginger, peeled and grated

3 tsp. Dijon mustard

2 tsp. honey (or maple syrup)

¼ tsp. sea salt

1. Using a food processor, process all the veggies up to the parsley until finely chopped and mix together in a large bowl. This may take a few batches.

2. Add almonds to the food processor and pulse, until roughly chopped, and mix in with the salad along with the sunflower seeds.

3. In a small bowl, whisk together all the ingredients for the dressing and drizzle over top of the salad OR place in a jar and use as needed. Enjoy!
