My Favorite Greek Quinoa Salad
Bbq season is in full effect! Hot dogs, hamburgers, chicken, macaroni salad, chips, dips beers, cocktails you name it! It's probably the only thing I really LOVE about the summer.
Have you ever find yourself in a situation, where you're invited to a BBQ or picnic and have no idea what to bring? You're watching what you eat, you're vegan or vegetarian or you just want to bring something different. Well, I have the perfect salad that is not only healthy, it's low calorie, light and can be made to cater to both vegans and vegetarians! Winning!!
I've made this salad for a few family gatherings and it's been a hit! A great side or meal on these sweltering summer days!
Greek Quinoa Salad
1½ cup dry quinoa
½ teaspoon kosher salt
½ cup extra virgin olive oil
1 tablespoon balsamic vinegar
2 garlic cloves, pressed
½ teaspoon dry basil, minced
½ teaspoon dried thyme
kosher salt and freshly ground black pepper
3 cups arugula
1 15 ounce can garbanzo beans, drained
⅓ cup roasted red bell pepper, drained and chopped
⅓ cup pitted kalamata olives, sliced or chopped
⅓ cup crumbled feta cheese (omit if vegan or get vegan friendly feta)
Cook the quinoa according to package directions with ½ teaspoon salt added to the water. Cool completely.
Mix the olive oil, balsamic vinegar, pressed garlic, basil and thyme. Whisk until well combined. Season with kosher salt and freshly ground black pepper and set aside.
To a large serving bowl, add the quinoa, arugula, garbanzo beans, contents of the Salad Savors package or red bell pepper, kalamata olives and feta cheese.
Drizzle with the dressing and. Season to taste. Serve at room temperature.
