Shrimp Bacon Spinach Pasta in a Cream Sauce.
I love bacon and I love shrimp! Recently, I ran a half marathon and the night before I wanted to “carb load” but didn’t want to feel guilty about what I was eating. I remember seeing a recipe on Facebook posted by Tasty for a Shrimp Spinach Bacon Alfredo. I thought to myself “self this sounds good why don’t I make it but with a few changes to lighten it up.” So that’s what I did! Thanks Tasty! 😋
Shrimp Bacon Spinach Pasta in a Cream Sauce.

Ingredients:

2 tablespoons olive oil
4 cloves garlic cloves, chopped
2 lb shrimp
3 cups spinach
½ onion, chopped
2 teaspoons salt
1 teaspoon black pepper
2 cups fat free half & half
1 lb whole wheat fettuccine pasta, cooked
6 slices turkey bacon, cooked and chopped
1 cup parmesan cheese
Instructions:
Heat olive oil over medium heat in a large pot.
Cook the garlic and the shrimp until the shrimp is pink, then remove the shrimp.
Add the spinach, onions, salt, and pepper, cooking until the onions are translucent.
Pour in the half & half and bring to a boil. Add the fettuccine, stir until the pasta is evenly cooked. Mix in the cooked shrimp, bacon and parmesan until the cheese is melted. Yum!
