Vegetti & Chicken Spinach Meatballs
Eating right doesn't have to be boring! I love playing around with recipes, especially traditional ones. I believe, to enjoy eating healthy, that you must have some fun with your food. I mean, as a mother of an 8yr old who LOVES veggies, I can pretty much experiment and try anything with her. The challenge though, is that she doesn’t eat red meat or fish (her choice). She’s more of a poultry person. Not that we eat a lot of red meat, but I do like to have a serving of lean red meat once a week.
Since poultry is big in our house and we love spaghetti, here is my Vegetti and Chicken Spinach Meatballs recipe. My take on spaghetti and meatballs! 😊
Vegetti and Chicken Spinach Meatballs

Ingredients:
1 pound ground chicken
10 ounce box frozen spinach, thawed, drained and chopped
2 tablespoons chopped fresh basil
2 large garlic gloves, minced
1/2 medium onion, finely chopped
2 eggs, beaten
1/4 cup plain bread crumbs
1/4 cup shredded Parmesan cheese
1/2 teaspoon of salt
1/4 teaspoon black pepper
Instructions:
Preheat oven to 350 degrees.
In a large bowl mix all the ingredients together until just combined. Form the mixture into golf ball sized balls and place on a baking sheet coated with cooking spray or lined with parchment paper. Bake at 360 degrees for 25-30 minutes.
