Yummy in My Tummy Healthy Chocolate Chip Cookies
So, I’ve mastered the healthy chocolate chip cookie! Just in time for the holidays!!
I mean who doesn’t love a good chocolate chip cookie? Warm with gooey morsels of chocolate chips!!! Paired with a tall glass of cold milk! Do I have your attention? Great!!!!
While chocolate chip cookies are yummy and make all the problems of the moment seem silly, they can still add some inches to the waist when eaten in abundance. So as a rule, I always say, eat in moderation!
With this recipe one medium sized cookie is about 63 calories. So, 2 at 126 calories is a tasty guilt free snack! I just swapped out some of the traditional high calorie and fat ingredients for natural/low fat ingredients and voila! Family approved!
Yummy in My Tummy Chocolate Chip Cookies

Ingredients
1/4 cup solid coconut oil
1/2 cup coconut sugar
1 large egg yolk
3/4 teaspoon vanilla extract
1/2 cup white whole wheat flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 cup dark chocolate chips
Instructions
1.Preheat the oven to 375. Lightly spray a cookie sheet with cooking spray.
2.In a medium bowl, add the solid coconut oil and coconut sugar, and beat until fluffy about combined, about 30 seconds.
3.Add the egg yolk and vanilla, and beat until combined.
4.Next, evenly sprinkle the flour, salt, baking soda and baking powder on top of the coconut oil mixture. Beat to combine everything well.
5.Finally, stir in the chocolate chips.
6.Press the dough flat in the bowl (as best you can), and roughly divide the dough in quarters. From each quarter, make 2 cookies, for a total of 8 cookies.
7.Space the cookies evenly on the baking sheet, and press them down slightly--not totally flat.
8.Bake for 9-11 minutes, until the edges are starting to turn golden brown.
9.Let cool on the baking sheet for 2 minutes, and then move to a wire rack to cool completely. (But seriously: who lets cookies cool? My family eats these straight out of the oven).
