Chicken Sausage in Salsita
Here's a great quick weeknight dinner that healthy and the whole family will love!
Chicken Sausage In Salsita

Ingredients:
3/4c of tomato sauce
2tbs of Sofrito * (See bottom for recipe)
1 onion, diced
1 clove garlic, minced
1 Tbsp olive oil
4 links spicy chicken sausage, cut into ½ inch slices
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 handfuls of fresh spinach rinsed
Pinch of pepper
1/4tsb of kosher salt
Instructions:
In a large skillet on medium heat, drizzle olive oil and sauté onion and garlic until fragrant. Add tomato sauce
Add sausage slices and cook for a few minutes until brown, turning half way through.
Add onion, bell peppers, and cook until tender, about 3 minutes then seasonings, cooking and additional 5 minutes until everything is incorporated and heated through. Toss in Spinach and serve!
* Sofrito
One of each:
Red,Green,Yellow pepper
1c of Cilantro rinsed
1/2c Culantro rinsed
1 Red Onion cut into quarters
6 Cloves of Garlic
2 ripe plum tomatoes
3 ajices dulces (a type of sweet pepper-if you can not find it in your local supermarket or vegetable stand, omit it)
Grab a blender and add all the ingredients. Purée till smooth. Freeze and add it to any recipe you choose!
I personally like to use ice trays to freeze my Sofrito. I just pop one out and add it to my sauces, marinades and stews!
