Guilt Free Macaroni Salad
BBQ and picnic season is here! Nothing better than getting a group of family and friends together, eating some delicious food and drinking cool refreshing beverages!
A side that I like to bring to most gatherings is salad! My fave....well, I love a good macaroni salad, but honestly I hate the calories! So, I had to take the traditional macaroni salad and make a few modifications to make it guilt free. The biggest change was subbing mayonnaise for greek yogurt. That's right greek yogurt! Guess what? No one even noticed the difference! Ha! It was just as good, if not better with the Greek yogurt! So here's my Guilt Free Macaroni Salad!
Guilt Free Macaroni Salad

INGREDIENTS
16 ounces whole wheat elbow macaroni
2 cup Plain Greek Yogurt
1/4 c white vinegar
2 Tbsp Dijon Mustard
2 tsp. salt
1/4 tsp. ground black pepper
1 cup thinly sliced celery
1 cup chopped green
1 cup of diced carrots
1/4 cup chopped onion
DIRECTIONS
Cook macaroni according to package directions; drain and rinse with cold water until completely cool.
Combine Greek yogurt, vinegar, Dijon Mustard, salt and pepper in large bowl. Stir in macaroni, celery, green pepper, carrots and onion. Serve!
* This serving is for about 10. Cut the recipe in half for 4-5 servings!
