Healthy Yellow Cupcakes with Lavender or Lemon Buttercream
With Mother's Day fast approaching on the 14th, What better way to tell mom you love her, then by baking her some healthy yummy cupcakes! Cupcakes go fast in my household, so it's important for me to try and make them as healthy as possible without sacrificing taste.
Here's a great healthy version to yellow cupcakes! They are just as delicious and what makes it better is that you know what you're putting into them! As an added bonus I used DoTerra Essential oils to infuse a Lavender and Lemon taste into the buttercream frosting!

Healthy Yellow Cupcakes with Lavender or Lemon Buttercream
1 cup whole wheat flour or white flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 tbs ground flaxmeal
4 sugar
2 Stevia packets (or 2 extra tbsp sugar)
1 tbsp pure vanilla extract
1 cup plain or vanilla yogurt of choice
1/4 cup skim or 1% milk
3 tbsp coconut or canola oil
Preheat oven to 350 F, and grease muffin tins. Combine all wet ingredients with the flax, and stir vigorously. In a separate bowl, combine all remaining dry ingredients, and mix very well. Pour wet into dry, and mix until just combined (don’t overmix). Cook 18-20 minutes, then let sit at least 10 before removing from muffin tins.
Lavender or Lemon Buttercream
Ingredients:
1 cup unsalted butter
4 cups sifted powdered sugar
1/2 teaspoon vanilla extract
1 drop Lavender or Lemon Essential Oil
1 drop Violet Wilton Gel Food Coloring
Directions:
In a stand mixer, use the paddle attachment to blend the butter on medium until pale and fluffy. This will take about 2 minutes.
Turn off the mixer and scrape down the sides. Add in about half of the powdered sugar. Turn the mixer on low. Blend until ingredients are combined and then turn the mixer off. Scrape the sides down again.
Add in the rest of the powdered sugar. Turn the mixer on low once again. Combine then blend on medium for 2 minutes. Turn off and scrape the sides down again.
Turn the mixer on high and mix for 3 minutes. The frosting will increase in volume. Add in the vanilla extract and 1 drop of Lavender or Lemon essential oil. Mix on low and taste the frosting. If the lavender or lemon flavor is too light for your taste, add 1 more drop of the essential oil and blend again.
Now add a tiny amount of food coloring. Mix on low until the color is even. You might want to add more gel color for a darker, deeper shade. This might take a few runs of mixing and scraping until all the color is consistent throughout.
Decorate and enjoy!
