Peppermint Chocolate Covered Popcorn
This past weekend I cohosted a wonderful workshop on cooking with essential oils. An intimate gathering that involved a few delicious recipes using doTerra’s essential oils.
In an earlier blog regarding meditation, I mentioned the use of essential oils to relax and prepare for your meditation session.
Essential oils are the fragrant, highly concentrated natural ingredients that are found in plants. They are what give the plant its characteristic odor and contain the healing power of the plant from which it was extracted. When used correctly, essential oils bring a wide range of health benefits since unlike modern drugs, they have no side-effects.
A typical essential oil will contain more than 100 different chemical compounds, each of which shows a specific therapeutic property, and it is for this reason that many essential oils can be used for such a wide range of conditions. Virtually all essential oils possess antiseptic properties, but many also have antifungal, antiviral and antibacterial properties.
Essential oils are located in tiny secretory structures found in various parts of plants such as leaves (eucalyptus), berries (juniper), grasses (palmarosa), flowering tops (lavender), petals (rose), roots (angelica), zest of fruit (orange), resins (frankincense) and wood (cedar). One of the samples I made at the workshop, were Chocolate Peppermint covered popcorn. They were a hit! Sometimes you want sweet and savory without feeling too guilty about eating it!

This a great snack to make or give to friends and family. It’s like eating a Girl Scout Thin Mint Cookie but in a popcorn!
Chocolate Peppermint Covered Popcorn
Ingredients:
1 bag of all natural popcorn or ½ - ¾ cup of popcorn kernels
6-8 ounces of semi-sweet or dark chocolate (think antioxidant 😉)
5-7 drops of doTerra peppermint essential oil
Instructions:
1.Pop your popcorn in your microwave.
2.Transfer the popped corn to a large container with lid.
3.Once the popcorn is ready, start melting your chocolate. Place it in a microwave safe bowl and microwave for 30 seconds, stir, microwave for another 30 seconds, and then continue microwaving in 10 second intervals until its melted to your liking.
4.Stir in 5-7 drops of peppermint essential oil, or to taste.
5.Pour or spoon the chocolate over the popcorn cover container with lid and toss it to coat.
6.Enjoy! But be ready for messy hands if the chocolate is still melty. Allow the chocolate to cool completely as possible so that it’s a hard coating and less mess!
