When Valentine's Day is on a Tuesday!

With Valentine’s Day, a little under a week away many of us are trying to figure out what to do or what to buy for our sweethearts. I can tell you now, the fact that it falls on a Tuesday, poses as an obstacle for many of us. From child care, to reservations at a nice restaurant, planning a nice Valentine’s evening can become stressful.

To help alleviate some of the stress involved in planning a nice Valentine's evening. I’m sharing a few ideas that are budget friendly, yummy and of course guilt free! All you need to do is find a sitter for a few hours or involve the kids because they too are our valentines <3

For gifts, I like to leave that up to the individual. Everyone views Valentine’s Day gift giving differently and that’s not a debate I want to get into! I will say that you can never go wrong with flowers and a card, but that’s just me! Staying in and cooking a nice homemade meal and dessert is a simple, cost effective way to spend Valentine’s Day on a weekday. You can always go out on the weekend but if you want to do something the day of, why not cook?

This recipe takes 15-20min to prepare and can be thrown in the crockpot for 6-7hrs. So, while you’re working or running errands dinner is cooking! As for the dessert, who doesn’t love chocolate dipped strawberries? Fruit dipped in dark chocolate… can you say antioxidant! Save the hassle of the restaurant and reservations for the weekend and spend a nice evening at home with your sweetie!

Clean Eating Slow Cooker Italian Chicken

Ingredients:

4 lbs. boneless, skinless chicken breasts

5 medium tomatoes, chopped

1 onion, chopped

3Tbs. garlic, minced

2Tbs. tomato paste

2Tbs. olive oil

1Tbs. honey

2Tbs. Italian Seasoning

1Tbs. red pepper flakes

1tsp. sea salt

1tsp. black pepper

Directions:

Mix all ingredients (except chicken) together and blend for about 30 seconds until ingredients are mixed well. Place chicken breasts and sauce in crock; cover and Crock on LOW heat for 7 hours. Shred chicken with 2 forks. Let chicken absorb sauce and crock for another 30 mins. to 1 hour on LOW. Serve with your favorite pasta or quinoa.

Chocolate Dipped Strawberries

Ingredients:

2oz of high quality dark chocolate

12 strawberries

Directions:

  1. Microwave chocolate in a small bowl on Medium for 1 minute. Stir, then continue microwaving on Medium in 20-second intervals until melted, stirring after each interval. Or place in the top of a double boiler over hot, but not boiling, water. Stir until melted.

  2. Dip strawberries in the melted chocolate
