Gourmet Grilled Cheese
Who doesn’t love grilled cheese? Cheese slapped in between 2 pieces of bread then pressed on a pan with butter. Just the right amount of butter and heat to make that grilled cheese nice and crisp on the outside and the warm, melted gooey cheese on the inside.
I can eat grilled cheese everyday with a bowl of tomato soup if my hips would let me. Since that’s not the case, I decided to do my research and make a grill cheese that is delicious, with a gourmet feel and most importantly calorie and carb friendly. This was a hit at a recent clean eating brunch I hosted and I want to share the recipe with you!!!
Havarti and Spinach Grilled Cheese

Ingredients:
1 Slice Light Havarti Cheese
1tbs Spinach Pesto * (My recipe will be at the bottom) or store bought basil pesto
Handful of baby spinach
2 Slices of -Multigrain/Ezekiel/Whole Wheat Bread (I used Millet and Chia Ancient Grain Bread)
Directions:
Spread the bread with a heaping tablespoon of pesto and top with cheese and a layer of spinach. Heat a griddle or skillet over medium high heat and spray with nonstick spray or olive oil mister before grilling the sandwich. Place sandwich on griddle or skillet and cook till both sides are nicely browned.

My Pesto Recipe
Ingredients:
2c of spinach
2-3 garlic cloves
2tbs Olive oil
½ Parmesan Cheese
Salt and pepper to taste
Directions:
Combine all ingredients in a food processor or chopper. Serve
