Fabulously Fit French Toast!
I absolutely LOVE French toast! One of my favorite breakfast dishes. Recently, I have been playing around with some recipes and came up with a version that is so good and wholesome you would not know that each slice is 92 calories, 16g of carbs and 2.8g of fiber!
Give it a try, I’m sure you’ll love it just keep it to 2 slices :)
1 ripe banana
1 cup 1% or fat free milk
½ tsp flaxseed
¼ tsp cinnamon
4 slices of multigrain, whole wheat or my favorite Ezekiel bread
Mash banana in a bowl then add milk, flaxseed and cinnamon. Stir well. Mixture should be creamy not too thick. Dip bread into mixture and place on a heated skillet for 3 to 4 minutes per side or until bread has a nice brown crisp crust on each side. Serve with some sugar free maple syrup or fruit. I chose to have mine with apples sprinkled with cinnamon.
