Sweet Potato Toast

One of my favorite things to eat is a hamburger but it can also be one of the worst things to eat! One of the reasons is the “bun” your standard hamburger bun contains 117 calories and 21grams of carbohydrates (the bad Carb!) and that’s just the bun! Do not get me started on the patty! So today, I decided to share a healthier option to the bun with my recipe (if that’s what you want to call it) for Sweet Potato Toast. Sweet potatoes are rich in vitamins B6 and A and are nutrient critical for healthy vision and bone health.

This option will leave you feeling as satisfied as the traditional bun without the guilt and at 28 calories and 6.5g of healthy carbs it’s a win!!! Give it a try!!

Sweet Potato Toast

1lg Sweet Potato

Pinch of kosher salt

Pinch of pepper

Instructions:

Carefully slice sweet potato (1/2 thick slices) you should be able to yield about 4 slices. Place the slices into your toaster. Toasters vary in heat settings, so it may take anywhere from 3-4 rounds before they are fully cooked. You may also use a toaster oven with the setting at 300-325 degrees for 20 minutes. Be sure to place the slices on the actual rack not the tray. Slices should be tender and slightly browned.

Add any toppings you like! I use an egg over easy, avocado or like here. I used my slices as “bread” for my turkey burger!
