Toasted Pineapples

Ahhh the warmer temps are finally here!!! Summer is upon us! I’m not a big fan of the summer heat but I love having my daughter off from school so we can go to the water parks, swim and go to the beach together.

Summer is also a time where a lot of folks steer of track with their diets. I mean who says no to a delicious bbq’d hamburger or mom’s famous potato salad. Don’t even get me started on all the wonderful summer libations.

One thing I know I can’t say anything frozen! Frosty beverages, frozen yogurt, frozen fruit and ice cream to make a few. The only problem. That too much of those wonderful frosty treats will add to the waist line!

As you have been following, you know that I’m absolutely in LOVE with my air fryer! It’s the best invention to date! You can literally cook anything in there.

Which brings me to today’s recipe! Toasted pineapples!!!

You can enjoy this treat any time of year! Serve it’s a scoop of frozen yogurt and you have a 230 calorie treat!! Winning!!!

Toasted Pineapples

Ingredients

2c fresh pineapple chunks

1 tbsp melted butter

3 tbsp. brown sugar

1 scoop vanilla frozen yogurt

Preheat air fryer to 350 degrees. Line basket with parchment paper and spray with nonstick spray.

Place pineapple in large bowl, Drizzle with butter and toss in brown sugar mix to coat evenly.

Cook 6-8 minutes until edges are browned.

Serve 3/4c with a scoop of frozen yogurt. Enjoy!!
