Parmesan Garlic Asparagus

The most wonderful time of the year is near! The holidays!!! Whether you celebrate Christmas, Hanukkah, or Kwanzaa, the holidays are the start of what I call the family gathering season! If your family lives on the other side of the world or country, the holidays are the time to get everyone together! Hugs from loved ones, laughter and smell of grandma’s pie or mom’s signature dish while opening presents, is what it’s all about.

With the success of my Thanksgiving series of blogs, I decided to write my next few blogs inspired by the holidays! From appetizers to kid friendly sweets, each week, I want to share with you an idea or recipe that you can make for your holiday gathering!

My first recipe is a delicious side. Roasted Asparagus tossed Garlic and Parmesan.

This yummy, low calorie side is a great addition to your holiday table spread and if your family is anything like mine, then you too, like a table of variety!

Parmesan Roasted Garlic Asparagus

Ingredients

3 tablespoons olive oil

8 cloves garlic minced

1 lb. fresh asparagus ends trimmed

salt and pepper to taste

1/3 c freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400 degrees.

  2. In a small pan, heat oil over medium-low heat. Add garlic and cook until golden brown, stirring constantly. About 2 minutes

  3. Toss the olive oil and garlic with the asparagus, until evenly coated.

  4. Place the asparagus on a baking sheet and sprinkle with salt, pepper, and Parmesan.

  5. Bake for 12 minutes or until cooked to your liking.
