Healthy Harvest Stew

I know I’ve said it before but the fall is my absolute favorite season. The changes in the colors of the leaves, the crisp chill in the air, leather jackets and boots. The fall is really wonderful!

The fall is also when I am my most inspired and creative in the kitchen. We tend to eat a little more pork during the fall. I think it’s because, growing up, my mom would make Pernils (roast pork shoulder), ribs and pork chops during the season.

Today, my family and I went pumpkin picking and after a morning filled with hot chocolate, apple cider donuts and pumpkins, I wanted to treat my family to a nice hearty meal that was filled with comfort yet healthy.

Introducing my Healthy Harvest Stew!

Ingredients:

1-1/2 pounds boneless pork, cut into 1-inch cubes

1 medium red onion, chopped

2 garlic cloves, minced

2 tablespoons olive or coconut oil

3 cups reduced fat chicken broth

3/4 teaspoon salt

1/2 teaspoon of Italian seasoning

1/2 teaspoon of turmeric

1 bay leaf

1 medium pumpkin, peeled and cubed (3 cups)

2 medium red delicious apples, peeled and cubed

3 medium carrots cut baton style

1 green pepper cut into thick strips

Directions

In a slow cooker. Add the pork, garlic, oil, broth with the vegetables. Add salt, Italian seasoning, tumeric and bay leaf. Cover and cook for 3-4 hours. Discard bay leaf. Serve over brown rice.
