Corn and Quinoa Salad

I’ve grown to love Quinoa. Initially, it wasn’t a fan but after seeing how diverse it is, I’ve grown quite fond of this ancient grain! Rich in antioxidants, Quinoa can be made in as little as 15min! It provides the necessary nutrients, fiber and minerals that regulate your digestive system and gives you a feeling of being full longer.

With that I have this yummy Quinoa and corn salad I came across and put my own spin on it! It’s light and refreshing and will be great at both your outdoor and indoor gatherings!

Corn and Quinoa Salad

Ingredients

3 cups cooked quinoa

4 tablespoons honey

Juice of 2 lemons

3/4 cup corn

1 cup grape tomatoes halved

1/2 teaspoon salt

1/2 teaspoon ground black pepper

2 tablespoons coconut oil (or olive oil)

Cook Quinoa.

Whisk honey and juice of lemons. Set aside.

While quinoa has 5 minutes left cooking, heat coconut oil (or olive oil) in a pan over medium high heat. When oil is hot, add tomato and corn with salt and ground black pepper. Stir to combine and heat for about 5 minutes through, until tender.

When quinoa has finished cooking, combine honey lemon mixture with quinoa. Add the corn and stir again to combine.

Serve and enjoy!
