Spicy Mango Pork

I love that when you eat a mango, you just feel tropical. Something about that bright, fresh burst of flavor can transport you to an island paradise in one bite Outside of the mental benefit of the momentary feeling of enjoying a tropical vacation, mangoes pack a ton of other (more well tested) health benefits. As a source of Vitamin A and beta-carotene, they are good for your eyes. Like many fruits and vegetables, they are high in fiber, which helps with digestion and may lessen the risk of heart disease. (Women need 25g a day and men need 38g!) They are also a great source of Vitamin C and potassium.

And, for those nights when you feel uninspired and need a quick meal that tastes like it took hours to make, this one is perfect!

I had some frozen mangoes in the freezer that I use for smoothies and remembered a restaurant that I went to with friends that had these amazing ribs with a mango bbq sauce.

I immediately grabbed my iPad and started researching bbq sauces. Thing is, I didn’t have any ribs. What I did have, was some boneless pork chops. So, I took them out defrosted them, cut them into strips, seasoned them and allowed them to sit in the fridge to marinate.

I found a recipe for mango bbq sauce and said to myself... “self what if you make a sauce to toss the pork in and make it a dish of some sort.

Well, here’s what I came up with!

Spicy Mango Pork

Ingredients:

  • 1 lb boneless pork chops or pork tenderloins-cut into strips

  • 1 tbsp vegetable oil

  • Salt and pepper to taste

Mango Sauce Ingredients:

  • 1 teaspoon chipotle powder

  • 1 medium-size mango flesh removed or 1c of frozen mango

  • 2 tablespoons olive oil

  • 1 tablespoon onion powder

  • 1/2 tablespoon garlic powder

  • 1 cup ketchup

  • 1 tablespoon Dijon-style mustard

  • 2 tablespoons agave

  • 1 tablespoon lime juice

  • 1 teaspoon Worcestershire sauce

  • Salt and freshly ground black pepper to taste

Instructions

1. Season pork with salt and pepper

1. Heat oil in pan over medium-high heat

2. Add pork and cook until browned. If adding vegetables, remove pork from pan. Add vegetables and cook until tender. Add pork back to pan.

Mango Sauce

  1. Place the mango in a food processor, and puree until smooth.

  2. Add the rest of the ingredients and pulse until well combined.

  3. Transfer ingredients to a separate saucepan and bring to a simmer. Cook for 5 minutes. Combine sauce with pork and vegetables and cook for additional 5-7min. Serve with Brown Rice!
