Stuffing and Mash Potato Patties

Hope everyone enjoyed their Thanksgiving!!! I know I did and yes I did indulge! Why not? I work hard and eat right. I tell all my clients, if you put in the work you will be rewarded! Everything in moderation. I'm sure you, like me have a ton of leftovers left. Today, I'm sharing a recipe that I shared on my Facebook page last year. I came across it perusing the internet a few years ago and now, I make every year with my left overs! Buen Provecho!!

Mash Potato & Stuffing Patties

Ingredients:

2 brown eggs, lightly beaten

2 tablespoons onion, finely chopped

¼ teaspoon pepper

2 cups leftover mashed potatoes or mashed sweet potatoes

2 cups leftover stuffing

2 cups leftover turkey, chopped

2 tablespoons butter

2 tablespoons oil, canola or vegetable

Add eggs to a large bowl and beat, add onions and pepper, stir in potatoes, stuffing and turkey. Add butter and oil to a large skillet and heat to medium heat. Scoop potato mixture with an ice cream scoop or spoon into heated skillet. Press down slightly with the back of a spatula. Fry on each side about 3 minutes or until golden brown. Drain on paper towel
