Watching the Waistline Pumpkin Waffles

With these warm temps, it sure doesn’t feel like fall ☹ I’ve been looking forward to the drop-in temps and the change in colors of the leaves as they fall off the trees. Instead, I’m literally wearing shorts and tanks and dying of heat exhaustion every time I go for a run! Fall is my FAVORITE season. I always feel my most inspired during the fall. However, with these warm temps, I haven’t been feeling very fall-ish (this is not a word but it’s my blog and I’ll make up words if I want to!)

Last weekend, I went pumpkin picking with my family. The smells of the fresh homemade pies, ciders, and cider donuts gave me the little push I needed to get myself back in the kitchen and play around with some recipes. So, in the spirit of fall, here is a healthy pumpkin waffles recipe the whole family will enjoy! I think these fluffy waffles will be make it on your table for breakfast or brunch!!

Watching the Waistline Pumpkin Waffles

Ingredients:

Dry ingredients:

1 cup whole wheat flour

2 teaspoons baking powder

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon ground ginger

¼ teaspoon all spice

½ teaspoon salt

Wet ingredients:

¾ cup pumpkin puree

¾ cup 1% Milk (Almond or Skim works as well)

1 Brown egg

1 teaspoon vanilla

Instructions:

Preheat waffle iron.

Add dry ingredients to a large bowl and whisk to combine. In a separate large bowl add wet ingredients and mix until smooth. Add dry ingredients to wet ingredients, mixing until just combined. Spray waffle iron with nonstick cooking spray and cook according to waffle iron directions (about 3-4 minutes). Makes 2 large Belgian waffles. Top with Greek yogurt, maple or apple cider syrup.
