Low-Cal No Bake Cheesecake Cups

Like many recipes on the interent, no bake cheesecakes are an easy and quick go to recipe that everyone loves. Only thing is....it's high in calories and sugar! Now, don't get me wrong, I live by the mantra "everything in moderation" but cheesecake?! C'mon who can just have one bite or small serving?

So, I went on to my favorite place (Pinterest) and looked at some No Bake Cheesecake recipes and came up with my own variation! This recipe is now 100 calorie recipe per serving :) #winning

Low-Cal No Bake Cheesecake Cups

Ingredients

For the Crust:

  • ¾ cup reduced fat graham crackers

  • 2 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 8oz reduced fat cream cheese, at room temperature

  • ½ cup granulated sugar

  • 1 tsp pure vanilla extract

  • 1/4 tsp lemon zest

  • 1 cup Greek yogurt

Directions:

To make Graham cracker crumbs, pulse in a food processor or blender until finely ground.

  1. In a medium bowl, mix together crumbs and melted butter until combined and crumbs are moistened. Divide evenly between individual serving dishes (about 2 tablespoons per serving dish). Press on the mixture with your fingers to form a crust layer.

  2. Make the filling: In a large bowl, beat cream cheese and sugar with an electric mixer until smooth. Add in vanilla and lemon zest. Set aside for 3-5min to let sugar dissolve into the cream cheese. Using a spatula, gently fold greek yogurt into the cream cheese mixture. Evenly spoon (or pipe using a piping bag) about 1/4 cup of filling into each serving dish and add a layer of graham cracker crumbs. Repeat by adding a layer of cream cheese mixture.

  3. Top with fresh fruit or as I did here...graham cracker.

  4. Cover and place in the fridge for at least one hour before serving, or up to 2-3 days.
